Linguini with pesto kissed tomato sauce
This recipe is a family favorite!!!!!!
INGREDIENTS
1 tablespoon olive oil
1 small onion chopped
2 garlic cloves, minced
1/4 cup tomato paste
1 28 oz can crushed tomatos
salt and pepper
1/4 cup pesto(recipe to follow)
1lb linguini
1) Heat olive oil in a large skillet over medium heat. Add onions, cover and cook for 5 minutes. Add garlic, cook until fragrant (about 30 seconds). Stir in tomato paste, crushed tomatos, and salt and pepper. Reduce heat to low and simmer for about 10-15 minutes. Add pesto shortly before serving.
2) In a seperate pot cook linguini until al dente. Drain mix sauce and pasta together
HOMEMADE PESTO
2 garlic cloves, peeled
1/3 cup pine nuts
1/2 teaspoon salt
2 cups basil
1/4 cup olive oil
Finely grind garlic, pine nuts and salt in a food processor or blender.
Slowly add olive oil while machine on slow until blended into a paste.
Cover and refridgerate until using
